Produced with biological Sangiovese grapes harvested at the exact point of maturity in our vineyards located in Montepulciano.
The grapes are handpicked then swiftly and gently pressed to extract the must. After cold decanting and debourbage the must is transferred into stainless steel vats to ferment. After fermentation the wine is placed into cement amphoras for malolactic fermentation and fining on the yeasts for three months.
The bottling is carried out under pressure without filtration to reduce the content of sulfur dioxide to the minimum.
