Produced with organic grapes of Prugnolo Gentile, Canaiolo, Colorino, Mammolo, Trebbiano, Malvasia and white Canaiolo. The mature grapes are harvested from our vineyards in Montepulciano. Harvesting is done by hand and the grapes are placed in small boxes. The white grape bunches are placed at them bottom of the stainless steel tanks where the fermentation takes place whilst the red grapes are manually chosen on a double selection table, before and after de-stemming. After a soft pressing, the grapes flow by gravity into the same tanks. The malo-lactic fermentation and aging takes place in small cement tanks for an average of 9 months. The wine is bottled without filtration and before being placed on the market, bottles are subjected to a further refinement of at least 3 months.
