D.O.C. “HARVEST 2007”

Production area: Commun of Montepulciano in sub area Argiano and S. Savino. Grapes: Pulceinculo, Malvasia, Trebbiano, San Colombano e Prugnolo Gentile Soil: clayey, sandy, limestone medium substrate and fossil tuff stone, not too deep.
Growing system: organic farming without the use of fertilizers, with alternating row (one wiht grass and one extirpated). Training system: Guyot with about 330o vines/ha with 9 /12 buds per vine .
Average yield per h: 30 hl.
Altitude: 320 mt on the sea level.
Age of the vines: 34 years. Harvest: by hand, in the second week of September 2007, in boxes of 15 kg.
Vinification: End of September the grapes were carefully selected in the vineyards and gently placed in the cellar of the drying at the farm Cerraie. At the end of February 2008 after careful selection, the grapes were placed in a vertical press to extract the flower must. After the cold debourbage fermentation began in a stainless steel tank. When the fermentation is considered done, the must was transferred to French oak barrels at Pietra del Diavolo Vinsantia, where continued his slow evolution until the end of March 2013.
Bottling: without filtration
Color: pure amber
Smell: baked figs, dates and chestnut honey flavours with hints of coffee, cocoa and toffee.
In the mouth: fat and enveloping, velvety taste, with a fresh acidity and a good persistence.
